Let’s face it, sometimes you just really, really need a cookie. If the pantry’s bare, and you don’t have a package of Oreos stashed away in a cabinet somewhere, this will only create more of an urgent need for cookies. It’s desperation cookie time. And this is when I turn to our favorite and easiest recipe around.
What You Need
If you have three ingredients, one bowl, a spatula, and a few minutes, then a sheet of homemade, freshly-baked peanut butter cookies will be in your immediate future. Don’t let the name fool you. I bake these cookies even when times aren’t desperate. They are just that good. Made with peanut butter, granulated sugar, and one egg (and vanilla extract, if you have it), our Easiest Peanut Butter Cookies come together magically. There’s no flour, no creaming butter, nothing fancy. In fact, they’re also naturally gluten-free and dairy-free, if that’s important to you or anyone in your family. Of course, if you do want to get a little fancy, I highly recommend adding ½ cup chocolate chips, sprinkling them with a little flaky salt, or both.
If you have a child in your household who can bake with minimal to no supervision, summon them to help do the job. They will be able to pull this off. This is a stir-together recipe that you can’t mess up. (And believe me, I have ruined my share of cookies.)
Why They’re Easy & Delicious
The cookies have a soft, tender texture and heavenly aroma that beats anything that comes pre-packaged. Because they are so soft, it is important to be patient and let them cool before you dig into those batches. Don’t be tempted to eat them straight off of the cookie sheet—this is the hardest part of making this recipe.
Just writing this makes me want to turn on the oven and stir together a batch. Like a reliable friend, they’re always there when you need them—which is the good thing and the bad thing about desperation cookies.
