My family came to visit at Christmas. My niece, Julie, always makes her spinach dip, mainly because we love it. This would make a great hors d’oeuvre, a nice dish to “pass along” or just a wonderful nosh when watching the game. Best of all, so easy to make. It’s served warm, but you can refrigerate the leftovers (if there are any) and heat it up the next day.
JULIE’S SPINACH DIP
Preheat Oven: 350° Bake Time: 20 Minutes Serves: 10*
10 Oz. box of frozen chopped spinach, cooked and water squeezed out
1/2 Cup sour cream
1 Can of artichoke hearts, drained and chopped
1/2 Cup mayo
1/2 Cup shredded mozzarella
1/2 Cup shredded parmesan (or asiago or Italian cheese of your choice)
1/2 Teaspoon garlic, minced
Mix all ingredients and place in an oven-proof dish. Bake at 350 for 20 minutes until hot and bubbly.
*You can double and triple this recipe. You can mix ahead of time and bake right before serving.
Serve with bagel chips, tortilla chips or Triscuits.
